More Details Emerge About Wylie Dufresne’s New Restaurant, Alder

The wd~50 chef’s new spot, Alder, is set to open this spring. The Times got Dufresne to talk about a few of his dishes, which include pigs in a blanket, clam chowder, Caesar salad, chicken liver toast, oxtail stew, calamari, and pub cheese. Of course, none of these will be normal renditions — you’ll eat the mackerel-topped Caesar salad with your hands, and the pub cheese is purple. The best news is that no dish will exceed $25, so feel free to experiment and try the “oyster-flavored Pirate’s Booty.” [Earlier, Earlier, NYT]
