Emeril Is Named the 2013 James Beard Foundation Humanitarian; Bee’s Knees Celebrates Fat Tuesday

• Bam! Emeril Lagasse has been named the 2013 James Beard Foundation Humanitarian of the Year. This recognition celebrates his work through the Emeril Lagasse Foundation, which aims to expose disadvantaged young people to the culinary arts. Emeril will be honored on Monday, May 6, at Lincoln Center’s Avery Fisher Hall. [Grub Street]

• Bee’s Knees Baking Co. has reinvented the King Cake for Fat Tuesday. As per Big Easy tradition, a baby doll trinket will be placed in each of its signature cake-cups before baking. Available starting February 12. [Grub Street]

• On February 7, La Maison du Chocolat will host free tastings at all three of their Manhattan locations (Madison, Rockefeller Center, and Wall Street) from noon to 6 p.m. In addition to the boutique’s limited-edition Valentine’s collection, samples will include freshly made raspberry ganache. More Details Emerge About Wylie Dufresne’s New Restaurant, Alder

The wd~50 chef's new spot, Alder, is set to open this spring. The Times got Dufresne to talk about a few of his dishes, which include pigs in a blanket, clam chowder, Caesar salad, chicken liver toast, oxtail stew, calamari, and pub cheese. Of course, none of these will be normal renditions — you'll eat the mackerel-topped Caesar salad with your hands, and the pub cheese is purple. The best news is that no dish will exceed $25, so feel free to experiment and try the "oyster-flavored Pirate's Booty." [Earlier, Earlier, NYT]

There's comfort food — all of it cozy and warming and generally terrific for making you feel better — but what's the most comforting comfort food? Is a roast chicken better than perfect braised short ribs? Who can say for sure? Grub Street can. We've taken thirteen classic comfort foods and ranked them on a scale of 1 to 5 according to four factors: fattiness (self-explanatory), carb appeal (ditto), homeyness (did you grow up eating it?), and warming bubble (how much does a dish's comforting steam just totally envelop your face as you eat it?). Fairway in Red Hook Will Reopen on March 1

The beacon of baby carrots and affordable olive oil at the end of Van Brunt Street will once again shine brightly come March 1, Carroll Gardens Patch reports. The 52,000-square-foot grocery store was inundated with five feet of harbor water and storm surge during Hurricane Sandy, and the former tobacco warehouse was hit with fifteen-foot waves. The store was gutted, dried out, and beefed up — a second-floor restaurant may even still be in the works. "Man," the store's account tweeted this morning, "we've missed you." The Superdome wasn't the only thing to lose power this weekend: Guy Fieri was rejected from the VIP section of a New Orleans Super Bowl party, according to the always-trustworthy sources at Us Weekly. The social anthropologists at Us note that Fieri, perhaps still smarting from his New York Times beatdown, "caused a total scene" when he was denied access to the exclusive area. Apparently he "didn't have the right bracelet, and nobody in New Orleans knows who anyone is." Emeril totally would've gotten in. [Us, Earlier]

M. Wells Dinette Goes for the Slapshot With Hockey Night Menu

In honor of the first face-off between the Montreal Canadiens and the Boston Bruins, Hugue Dufour, who is no stranger to game-day feasts, will tomorrow night lead M. Wells Dinette diners through a caloric gauntlet made up of a deluge of fried chicken, numerous Philly cheese steaks, lots of poutine, soft pretzels, pan pizzas, parmesan fondue, dessert sandwiches, beer, and more. Actress Jennifer Esposito’s East Village Bakery Opening Soon

Her shop on East 10th Street will offer gluten-free, dairy-free, refined-sugar-free, soy-free, peanut-free, allergy-friendly organic pastries. That's a mouthful. Celiac disease is important to Esposito, who claims that the condition cost her a job on CBS's Blue Bloods. If her Grub Diet from last year is telling, expect to find her homemade chocolate-banana muffins here. Sounds tasty, but then again, it's probably kale-based, or something. Which ‘A-List Celebrity Chef’ Is Landing at the New Archer Hotel?

Opening next spring at 45 West 38th Street will be the new, 21-story Archer Hotel, which will have a first-floor, "chef-driven" restaurant and a rooftop bar. Steve Kamali Hospitality is developing both, and promises the restaurant "will soon have a face and a name of an A-list Celebrity Chef who is widely known and respected!" Mysterious! Is the Archer Hotel where we'll see Bobby Flay and the second coming of Bolo? Heston Blumenthal's secret New York project? This isn't good: A Connecticut woman was arrested last night for pulling a semi-automatic handgun on another woman at Chuck E. Cheese's, according to NBC. It's hardly the first time parents have brawled at Chuck's: Over the summer, a woman crashed a Chuck E. Cheese's kids' party to slice off a romantic rival's ear. Who needs farm-to-table when there's buffet-to-jail?

High-School Students Arrested for Starting Food Fight

Clearly the principal of Georgia's Ola High School is not an Animal House fan. He got nine students jailed for staging a food fight in the cafeteria, and they're facing charges of disruption of public school, inciting a riot, failure to disperse, obstruction, and possession of marijuana (that last one's an oops). Since five of the pranksters are adults, this could go on their record. School officials found out about the shenanigans ahead of time and asked the students to halt their plans. Now they're on a witch hunt, looking at surveillance cameras to try to identify more food-throwers. Relax: Sloppy Joes and spaghetti never hurt anyone. [11 Alive]

C’mon, Get Happy: Pret A Manger Requires Employees to Act Cheerful

Soup, salad, and europhia, dammit!

The New Republic reports on the strange set of deportment guidelines known as "Pret Behaviours" that all Pret A Manger employees are "required to master." The London-based fast-casual chain, which is expanding in New York, apparently most values an employee who "creates a sense of fun." It does not want clerks, however, who are "just there for the money" and/or those who "use jargon inappropriately." All of this sounds like standard operating procedure for any chain aiming for profitability — after all, no one wants to deal with the guy at the register who stares you down and communicates with bastardized K.C. and the Sunshine Band lyrics — but Timothy Noah thinks it's much more serious than tuna melts and garbled "Boogie Shoes," writing, "Pret keeps its sales clerks in a state of enforced rapture through policies vaguely reminiscent of the old East German Stasi." So what gives?

The ‘Big Mac Index,’ Now Extra Well Done

"The Big Mac index was invented by The Economist in 1986," the magazine writes, "as a lighthearted guide to whether currencies are at their 'correct' level." It's since become the benchmark for understanding the relative values of currencies around the world. It may not be constructed on the best foundation of economics, but that's why they call it "burgernomics," and anyhow — fortified with raw GDP as it is — the chart is not without its insights. Duff Goldman Offers to Bake for Lesbian Couple That Experienced Discrimination

Last month, an Oregon baker refused to help a same-sex couple who wanted to purchase a wedding cake. The women claim that Sweet Cakes Bakery owner Aaron Klein referred to them as "abominations unto the Lord," and said he'd rather close down his business than "be forced to do something that violates my conscience." That's exactly what may happen; Klein's now under investigation for violating the Oregon Equality Act of 2007, which prohibits discrimination based on sexual orientation and gender identity. As sad and vile as all of these stories of discrimination are, what's inspiring is that people are quick to stand up and defend others.

Sandy-Damaged Bridge Café Is Seeking Donations to Reopen

October's storm damaged the Bridge Café, which stands at the fringe of the Seaport just across the street from a Brooklyn Bridge on-ramp. Proprietor Adam Weprin told the Times in December that the restaurant's basement flooded with nine feet of water, while three feet of surge battered the dining room. The restaurant, which occupies a wood-frame building at the corner of Water and Frankfort Streets, was one of Ed Koch's favorites, and is the city's oldest surviving tavern. Eater NY reports the restaurant is now looking for donations to help offset the cost of replacing its appliances, prep equipment, fixtures, floors, and electrical work, all of which was destroyed by Hurricane Sandy's storm surge. Cookie Monster’s Carbo-Crime Spree Comes to an End in Germany

You probably heard about last month's theft of an ornamental, gilded bronze biscuit that had been hanging without incident just outside the German bakery Bahlsen's office in Hanover, Germany, for 100 years. Bahlsen's makes Leibniz biscuits, and this 44-pound model is emblematic of the company's history; so naturally, Bahlsen's chair Werner M. Bahlsen appealed to the robber through the press, offering 1,000 euros for any information leading to the gold Leibniz's safe return. But, nothing. But then, just days after the crime, newspaper Hannoversche Allgemeine Zeitung received a really weird ransom note. It was from Cookie Monster.

Sant Ambroeus Is Taking Over Caffe Falai

Next Tuesday's CB2 Manhattan Licensing Committee meeting includes a new liquor license application for 265 Lafayette Street, last home to Caffe Falai, under the name Lafayette Ristorante LLC, d/b/a Sant Ambroeus. It would appear that the talented Iacopo Falai's breezy restaurant, which closed last November and has not reopened since, is down for the count, joining his original Falai, which shuttered in 2011.
