L.A.’s rapidly improving pizza scene is soon to get a big boost from a Brooklyn original. Grimaldi’s, New York’s legendary coal-fired pizza place under the Brooklyn Bridge, is heading to El Segundo, part of a plan to bring six locations to Los Angeles. Grimaldi’s was founded by former Patsy’s chef-owner and Lombardi’s descendant Frank Grimaldi, who sold the business in 1998. A 280-seat location of the restaurant, which recently expanded to six other states, is coming to the former home of Daily Grill on Rosecrans Avenue, with a debut planned in late spring.
So far, Los Angeles is yet to have its own coal-fired pizza place, with local talk positing that they are actually banned by city codes. Nonetheless, a spokeswoman for the restaurant tells Daily Breeze that owners are making room for two hand-built, coal-burning brick ovens. In fact, getting them built will be the very first matter of business, constructed early to break them in before opening. In addition, the chain boasts about having a chemist on-board to make its water comparable to Brooklyn’s own. Grimaldi’s will also feature a banquet room, 20-seat bar, and outdoor patio.
The famous pizza place is one of many New York imports that have rushed into L.A. as of late, including restaurants like Fig & Olive, La Sandia, Rosa Mexicano, Scarpetta, Papaya King, The Blind Barber, Bagatelle, and forthcoming locations of JapaDog, Artichoke Pizza, and ultra-exclusive Rao’s.
