The chef Eric Korsh of Calliope, who cooked for Graydon Carter at his Waverly Inn reboot, has temporarily replaced Brian Nasworthy in the kitchen at the Beatrice Inn, Diner’s Journal reports. Last fall it had been intimated that the Per Se vet’s cooking was the source of opening-date delays; partner Emil Varda tells the Times that Nasworthy “is a very talented chef, but his culinary philosophy did not agree with ours.” A new, permanent chef will be named next month.
