Celestino Drago is recapturing one of the hallmarks of his recently shuttered Santa Monica flagship at his Downtown restaurant, Osteria Drago. The chef, who has been known to bag a bird or two in his day, is introducing a $70 tasting menu centered on locally caught game meats. Served through fall, dishes include a carpaccio of venison and guanciale with huckleberry and cardoons, rabbit fettucine with shaved fennel and baked ricotta, and a truffle-crusted partridge. Drago frames the five-course menu as an honor to his annual pheasant and duck-hunting trips to North Dakota, with a $45 Italian wine-pairing option also available. See the full tasting menu below.
