Now Open: Bubba’s Texas BBQ, Blowing Heavenly Meat-Scented Smoke in Fishtown

Fette Sau isn’t the only newcomer blowing heavenly, meat-scented smoke around Fishtown. Earlier this week, Bubba’s Texas BBQ opened, literally, around the corner from Stephen Starr’s recreation of Joe Carroll’s Brooklyn-based charcoal pit. Where Fette Sau dodges established barbecue schools and rules, Bubba’s specialty is Texas style. Dry-rubbed meats, slowly smoked for hours inside smokers that owners Robert “Bubba” Kolbasowski and Steve Ehrenhalt had custom built for the West Girard Ave. venture, are broken down by Nibblers, Sandwiches, Platters and Sides on the menu. There are also salads and desserts. To wash it all down, Bubba’s has 10 taps devoted to local and craft beers, additional brews in cans and bottles, and a full bar offering wine and liquor.
