From his self-imposed exile in Mexico, as he’s told us, chef Jeremiah Tower has been doing a lot of writing. While we wait to see if his publisher takes his follow-up to his 2003 memoir California Dish, and while Tower contemplates a move to the New York metro area to work on that big food hall project, he’s given us a 75-page tribute to his culinary idol, Escoffier. It’s called A Dash of Genius, and it’s been published as an e-book for the Kindle. In it, Tower promises stories about “the world’s first international superstar chef,” as well as adaptations of classic Escoffier recipes. [SFoodie]
