‘Hypoallergenic’ Milk Doesn’t Sound Like It’s Worth the Effort

Hoo boy: New Zealand scientists have figured out a way to strip away the presence of BLG, a protein that makes people sick, from cow’s milk. And all they have to do to make this happen is “interfere” with cows’ DNA. The downside — because there always is one — is that knocking out BLG dramatically increases the production of casein, which, of course, disagrees with all the other people who have severe milk allergies. Milk, in general, has been disagreeing with several people already this week, Justin Bieber among them, and we’re starting to wonder if this whole thing just might be the start of a massive dairy defection.
