The current Next menu, Kyoto, is the last of the themes they announced when they launched season tickets almost a year ago. In fact, we’ve heard that it’s the last of the themes that they were throwing around even before they opened. It’s time for a whole new set of ideas building on the experience of running a restaurant that roamed from 1906 Paris to 2000s El Bulli, with one more conceptual stop (Childhood) along the way. So where will Next go next? That’s where you come in. They solicited ideas from diners and fans last night on Facebook and Twitter, with the request for “serious ideas only.” (That could be a tall order for something like Next, where the line between a serious idea and a parody one could be hard to pinpoint until it comes to life on the plate.) Most of the suggestions we’ve seen so far continue the geographic theme, but as much as we’d love to see their take on southern or 19th century Russian food, or a French Laundry menu, that’s relatively easy to think up. It’s the more conceptual ideas like Childhood that are harder to conceive— but potentially the most fascinating. And from what we’ve heard, that’s at least the direction that the first menu of the next season, already in the works, plans to go— apparently Chef Dave Beran has the dishes worked out for whatever will follow Next Kyoto around the end of the year, but what he doesn’t have for it yet is a name. Something so conceptual that they can’t even figure out what to call it? That’s the kind of Next we’re looking forward to next.
