Apothéke’s Heather Tierney Opening the Butcher’s Daughter

Speaking of vegan options, Grub hears that Heather Tierney, who co-owns Apothéke and Pulqueria with her brother Christopher, will open a juice bar and vegan café, the Butcher’s Daughter, in Nolita later this month. The menu by Joya Carlton (formerly of Buvette) will feature plant-based plays on meaty standards, including a beet “tartare” and faux cheese and charcuterie including cashew ricotta with mostarda. Brandi Kowakski (ABC Kitchen) is, as Tierney dubs her, “head juiceologist.”
