Chris Mitchell is out at LES neighborhood spot Fatta Cuckoo, which has a new chef, Matias Hernandez, a former sous-chef at Fatty Crab. In honor of the transition of kitchen-helmers and seasons, the restaurant’s rolled out new menus, as well as day-of-the-week specials (think Tuesday date night; weekend “Drunch,” i.e., an entree plus three cocktails for $25). On the revamped lineup: short-rib-stuffed squid, crispy pork with blueberry barbecue sauce, and housemade ravioli done “using wonton wrappers so they look more like little dumplings,” said co-owner Leah Tinari via e-mail.
