Cookie maven Dorie Greenspan of recently opened Beurre & Sel is an "America-France commuter," as she puts it, which means her life involves a lot of packing. In this "Case Studies" video for luggage-maker Tumi, Greenspan explains her suitcase strategy: First she lays each item out, creating a mise en place just like she does when she bakes. Other valise moves: "nesting" items, using a scarf to protect measuring cups and spoons, and toting certain accoutrements just in case, including a notebooks and pencil, and a book. Also, she divulges, "I never travel without M&Ms.;"
