The L.A. Times drops the word that David Myers, of Comme Ca, Pizza Ortica, and dearly departed Sona, is firming up the concept engineered for those rich geezer condos in Century City. Hinoki & the Bird sounds like some kind of rad retro greaser band from Tokyo, but will actually be a restaurant focused on the “flavors of Southeast Asia and Japan” under former Sona chef, globe-trotting kaiseki-student, and soon-to-be-Top Chef player, Kuniko Yagi. For those who can’t wait to see a return, of sorts, to inspired, delicately brushed Asian fine-dining menus from Michelin-lit Myers (a group we enthusiastically count ourselves as part of) tempting dishes already hinted at include a Vietnamese green curry lobster roll with basil blooms, willow-smoked tuna, and beef grilled on bincho-tan white-oak charcoal with goose-fat fried peanut potatoes. An opening is planned in December.
