Joseph Mahon Opening Permanent Burger Parlor on Sunday

Joseph Mahon’s Burger Parlor opens this Sunday in a red brick building in Fullerton, establishing a permanent roost for the chef’s pop-up concept of hand-cut fries, upscale Angus burgers, and cereal milk shakes with a side of craft beer that was once found at Rialto Cafe a few nights a week. Fast Food Maven shares some quality time with Mahon, who opened an all-day breakfast concept Early Bird to Orange County back in July. The chef will bring back his standards like the Lasorda burger, fried chicken, beer-battered onion rings, short rib chili on Belgian fries, and Sloppy Joes with fried cheddar cheese, along with a few “secret dishes,” reminding us of when Mahon served his burgers on the sly as an executive chef at Bastide.

If you never had the pleasure of eating the chef’s food at that upscale Melrose haunt, all you need to know about the man’s ability to put flavors together can be gained with a glance of his “Chip Shot” burger, which layers potato chips on a fontina burger with arugula, chipotle aioli, and wild mushrooms.
