The 632-page volume breaks down every conceivable cut of beef, poultry, pork, goat, and bison, with plenty of full-color photos, plus 200 recipes for dishes like spareribs with lemon confit rub, larb, veal sweetbreads, coffee-marinated bison short ribs, slow-roasted lamb with rosemary-pancetta, and home-cured bacon, along with guides to sustainable shopping, utilizing lesser known parts, and an up-to-date study on the state of all things carnivorous. This week, we’ve got three copies of this $40 giant to give away completely free to our readers. How do you enter the contest?

We’ll take all of the names that come in before this Friday at 5:00 P.M. and mix them up and select three at random, but only email us once as repeats will be eliminated.
