Chrissy Camba left Vincent, where she had been Executive Chef, a bit quietly a month or two ago and did some traveling in Europe. You know, Europe, where they know their wine and cheese. As they also do at Pastoral, the local chain of artisanal cheese and other fine stuff shops. Who happen to be about to open Bar Pastoral next to the flagship store at 2945 N. Broadway. Putting it that way kind of makes it sound destined to happen, and no one agrees more with that than Chrissy herself: “When the Bar Pastoral position was announced, I knew I was destined to join the team.” And though she’s the chef, it will be a team including cheesemonger Bryan Bland, beverage director Mark Hayes and owners Ken Miller and Greg O’Neill, all creating an experience that showcases the best in handcrafted cheese, charcuterie and other items, beer and wine and locally produced spirits and more, with an emphasis on making them go together. As Hayes says, “The beverage list at Bar Pastoral will highlight small-scale and sustainably produced wines and brews from all over the world with a ‘pairing is paramount’ approach, along with delicious and inventive cocktails showcasing some of our best local distilleries.”
