Its rooftop bar and dining area may be closing on August 31, but starting September 8, the NoMad will begin weekend brunch service, on Saturdays from 11 a.m. to 2 p.m., and Sundays from 11 to 3. Executive chef and co-owner Daniel Humm and the restaurant’s chef de cuisine Abram Bissell have immersed themselves in a brunch-heavy R&D; phase, we are told, test driving and tasting different versions of menu items. The lineup will be finalized later this week, but in the meantime, food and beverage manager Jeffrey Tascarella gave Grub Street a sneak preview of one confirmed item: “We’re trying to distill all of the elements from the roast chicken, including the truffle and foie gras, into a sandwich,” he says. “It’s going to be pretty great.” [Earlier]
