When we caught up with Zak Pelaccio at this weekend’s Superburger, he was busily preparing a delicious yet ultimately non-victorious lamb burger as chef for sponsor Amstel Light. We chatted him up about the restaurant he’s opening in Hudson with wife Jori Jayne Emde, and though Pelaccio wouldn’t divulge a name, he tells us the spot will be “super seasonal,” taking into account “eight seasons,” not four. Fans of the Fatty outposts should know this one is “non-ethnic,” though it “might have some Asian flair” here and there. Emde is experimenting with condiments, including a killer bourbon-barreled Worcestershire that went on the burger, and she’ll make pickles, kimchee, and more to dress up dishes. Look for a late-fall opening.
