Chestnut’s Ramen Replacement, Dassara, Now Open in Carroll Gardens

Word is that the ramen restaurant replacing Chestnut we told you about, Dassara Brooklyn Ramen, is now open, continuing the borough’s ramen boom. Per FloFab, the spot is serving a limited menu at the bar through Sunday, with the full shebang available for slurping August 15 (it will close the 13th and 14th). Don’t miss the Deli Ramen, an Asian-Jewish mash-up of chicken broth, noodles, matzo balls, Mile End smoked meat, and diced celery. “We tried to cut the meat to look like char siu,” owner Josh Kaplan tells us — “it kind of does.” There are also pork buns, and broiled oysters served with dashi butter and miso-glazed bacon to start, all of it to be offered for dinner nightly (closed Tuesdays).
