Meadowood’s Christopher Kostow Joins Other Top Chefs on Mission to Mexico

A group of notable chefs, including Alex Stupak of New York’s Empellón Taqueria and Empellón Cocina; Rosio Sanchez, the Chicago-born pastry chef at Noma in Copenhagen; and our very own Christopher Kostow, recently took a sort of culinary-diplomatic mission to Mexico City. They were invited to a food conference there by chef Enrique Olvera of Pujol restaurant in order to share ideas about food and discover some of the authentic flavors of Mexico, including bugs. Kostow was more interested in the Baja oysters and rambutan. “I don’t know if you come to Mexico to learn what’s new,” he tells the AP. “But rather you come to Mexico to learn what’s old.” [AP/Mercury-News]
