When pastry chef Patrick Fahy left Blackbird for the Sofitel he told us it was for the greater opportunities that a hotel’s full program of desserts and pastries offered. When you leave a Sofitel for a Trump hotel, it’s surely for more and more of the same in every direction. Fahy is joining the team under Executive Chef Thomas Lents as executive pastry chef for Sixteen, the hotel’s bid to rival Alinea as the city’s top restaurant in the minds of moneyed visitors who want to have the best the city offers during their stay. Also joining the hotel’s culinary team is Christopher Helsinger, who comes in as executive sous chef after working for Chef Lents as a sous chef at Restaurant Joel Robuchon in Las Vegas.
