Things are looking up today for Maru Global’s Chef Ryo Igarashi. He’s been bequeathed the taco truck that we told you Honest Tom’s namesake Tom McCusker was looking to fork over to a well deserving mobile munchies operator. McCusker is getting out of the food truck racket to focus his efforts on the bricks and mortar business he launched late last year. Igarashi, you’ll recall, closed up shop on his Tokio Global near Headhouse Square in April, while recovering from surgery to remove a blood clot from his brain. He and his wife Nicole Igarashi have since turned their attention to Maru Mobile Takoyaki, a roving operation, serving festivals and outdoor events.
