More than a year ago, we told you about Bedford Cheese Shop’s big plans to expand to Manhattan, and now Grub learns the 5,000-square-foot space opens Saturday. Bedford has already been holding classes for about a month in a classroom space they’ve dubbed "the Homestead" — check out the schedule of upcoming events, including a beer-and-cheese class happening tomorrow. There are also three cheese caves and a larger retail space than the 600 square feet in Williamsburg. That means there’s room for a ten-foot meat counter and more artisanal salume offerings. Cheese-wise, it will just be more of the same "curation," co-owner Charlotte Kamin tells us. "Right now we work a lot on rotating things in and out," she says. "We’re looking forward to having more space."
