“G.E.B. is like The White Stripes. You know, you’ve done all the fancy stuff, now you just want to put together a real simple band and play rock and roll,” is how Graham Elliot described it to us a few weeks back. Though as the image of one of the menus suggests, the musical references range all over. That’s how the menu will be presented, on an LP cover (just in time for this discussion), and while Elliot says that chef Jacob Saben will be making simple, approachable food, the trendily cryptic ingredient-only descriptions suggest that this wax is still spinning on the fine dining turntable in many ways.
