We told you gin was in every glass, and now Ravi DeRossi's El Cobre replacement, Gin Palace, has opened in the Cienfuegos complex. The dim rock-and-roll bar has something we haven't seen elsewhere in town: gin-and-tonic on tap, made with grapefruit bitters. The rest of the drink menu stays under ten bucks, with nothing too ornate: We'd order a white negroni or perhaps a pimm's cup made with ginger and raspberries.
