What was it we were saying the other day, about mixologists who give up “the working with drunks till 2 a.m. part— you know, the glamor— and [go] in-house for some large beverage distributor,” where they get to influence other bars while going home at family-friendly hours. Well, here goes another one— Debbi Peek, who helped put The Bristol on the map and most recently developed Balena’s radical Amaro bitters-based cocktail program, is leaving those gigs to go in-house for Southern Wine & Spirits as Illinois mixologist. She told 312 Dining Diva, “I am still going to consult on the menu[s at The Bristol and Balena], there are no menu changes in the near future… [The Boka Restaurant Group folks] are very happy for me and excited about my new venture.” [312 Dining Diva]
