Last night, first-time restaurateur Michael Burke officially introduced Eat.Drink.Americano to Downtown’s Art District—a neighborhood that the photographer-for-hire calls home—in the former Cafe Metropol space. Consulting chef Juan Pablo Torre (a culinary director and hotel consultant for Madrid’s HI Solutions) is the dude assigned to charcuterie/local cheese/market greens/craft beer duty, developing a modern menu of stoosh pub grub that cites influences from the global and historical forces that colluded to form the early 20th century U.S. diet. The day-to-day cooking of his menu will be carried out by chef Gary Walsh.

Now, we know gramps never ate an Alaskan red salmon flatbread in his life and or could fathom a menu stocked with sous-vide dishes, but that’s what E.D.A. is serving, along with other locally-sourced locos like soft shell crab English muffin sandwiches with pickled seaweed, oxtail sliders, self-described “beautiful” tomatoes and albacore, and steak tartare with mustard ice cream.

The restaurant’s industrial look was designed by Oonagh Ryan of her own eponymous firm. Metropol was all but demolished to make way for her look of bare brick, exposed wood beams, rustic chairs, and vintage found fixings (wine bottle chandelier, sixteen-foot menu mural by neighborhood artist Peter Greco), which also counts an open kitchen and a bar made with plumbing pipes and antique farm wood.

Meanwhile, Burke has hired one Eric Anderson as the general manager and resident beer expert. The restaurant currently features eight beers on tap and six in the bottle, with the expectation that Anderson will bring more to the table as he scouts the horizon for interesting and epic brews to add. The restaurant opens nightly at 5:00 P.M. and will be open for dinner Tuesdays through Sundays. See the full menu below.
