Last fall we mentioned that Dave Garry and Heather Gleason, owners of Center City’s Good Dog, were behind efforts to bring new life to Pennsport’s Witch, which closed last June. Today Garry, Gleason and partner Tom Darby send word that they will open The Industry, a restaurant and bar with American cuisine and an ample selection of craft beers, creative cocktails and choice wines, later this spring. Pat Szoke, who’s put his time in at Vetri, Farm & the Fisherman, and Buddakan, will oversee the kitchen side of things, and offer a menu with house-cured charcuterie, beer can poussin, Buffalo sweetbreads, and pork face nuggets (breaded and fried head cheese), among other dishes.

The bar and restaurant, which has been overhauled and re-imagined from top to bottom, will feature a rustic look and feel, compliments of reclaimed wood retrofitted throughout the space, and an 18-set bar and large communal table both wrought from pieces of walnut that have a live edge that shows off the natural elements of the tree.

The name of the place, and the subsequent discount offered those in the business, is a salute to everyone in the city that makes their living in the hospitality trade. But that doesn’t mean lay-folk aren’t welcome.
