Top Chef dude Marcel Vigneron is a ronin these days, using pop-ups to enter and exit our lives as he pleases, free of tying himself down to a serious commitment or even having to call the next morning. Over Easter weekend, the super-coiffed chef is again uniting with Chaya’s Harutaka Kishi for three days of brunching called “The Coop,” being held at the former La Cienega location of Gonpachi restaurant. Being held from Friday, April 8 through Sunday April 10, the five-course menu is priced at just $38 and looks to be a mash-up of Kishi’s French-Japanese approach with Vigneron’s molecular mojo. Such dishes include salmon mi-cuit with a deconstructed egg, a black tiger shrimp chawan mushi, and an intriguing promise of a nesting egg with bacon.
