EV Grieve does some digging on a community board application from one Bikinis, opening at 56 Avenue C. As you may know, a bikini is a kind of Spanish sandwich served in Barcelona and thereabouts (as well as at El Quinto Pino, per Serious Eats). As co-owner (and Nublu Records exec) Petrit Pula told Grieve, “it’s similar to a grilled cheese.” Pula’s fiancée, Karina Correa, is the driving force behind the restaurant, which will be “a Barcelona-style eatery with a vintage American diner feel. It will serve Bikinis (sandwiches), soups, salads, coffee, fresh juices and a few dishes,” Pula said. First Québécois diners, now this — if an international diner trend is afoot, we say, bring it on.
