Publican Quality Meats opens for lunch today (service hours 11-6 pm) at 835 W. Fulton Market, after rave reviews as a shop all weekend (at least from those on Twitter who weren’t otherwise tweeting about Next). You can see the shop for yourself now, but if you want to know more about what went into it, we’ve got an exclusive behind-the-scenes interview and tour with owner Paul Kahan. Three days before it opened as a shop last Monday, we sat down with him at The Publican and he talked about what the shop would be like and the philosophy behind the products that would be on offer. Then he walked us through the shop (which at that point didn’t have much meat in it) and took us downstairs for a tour of the real heart of the place— the walk-in meat fridge (which had plenty). The video’s about 4-1/2 minutes long, and if nothing else, you’ll learn the answer to one of the place’s greatest mysteries— why, with all these other artisanal chef-made products on the shelves, the ketchup they sell is… Heinz.
