“Turns out, this pluralistic, ageless, genderless group known as the locals didn’t care much, or very often, about local farmers and local suppliers (even if they were the local farmers and local suppliers),” writes Bruce Buschel in his recurring restaurateur column today, musing on his diverse Hamptons clientele, who range from fish mongers to entertainment moguls. He deduces, “Comfort trumps cuisine at the regular hang,” and openly admits that he’s still figuring it all out. Will Smith Street be any simpler? TBD. [NYT]
