Pascal Olhats Plans Pop-Up in His Own Restaurant to Keep Tradition Alive

Last month we learned that O.C.’s esteemed French chef Pascal Olhats was closing his refined Tradition by Pascal this Wednesday to make way for Christophe Eme**, a big bummer for fans, and worse for those who hadn’t had the luxury of sampling the devoted cooking here. However, Olhats has several other restaurants in SoCal and today O.C. Register’s Nancy Luna reports that the chef is holding a “pop-up” at his mall-based Brasserie Pascal, though it’s more of a throwback menu like the ones we’ve seen around town in recent months.

Called “Back to Tradition,” the chef plans to satisfy his disappointed fan-base by cooking signatures from Tradition by Pascal’s menu in the Fashion Island-based Newport restaurant starting in late March. Examples of dishes he’ll prepare include duck confit salad and roasted rack of lamb on a “mini-menu” in a specific space reserved for 26 diners that will be open Tuesdays through Thursdays.
