Shad Comes Upstream Early for Oyster House

Typically the humble shad, that’s the fish that gave Fishtown its name, doesn’t get much attention in these parts until April. That’s when the “river herrings” begin their journey upstream in the Delaware and Schuylkill rivers to spawn. But beginning tonight, Oyster House chef Andy Kitko will be serving shad as a special. Tonight, tomorrow and for however long the supply lasts, Kitko and crew will offer a different preparation of the fish.
