ARIA Resort and Casino in Las Vegas is adding a Mexican restaurant straight from O.C. into its dining portfolio aside projects from acclaimed chefs like Masa Takayama and Jean Georges. No, this isn’t some secretly great gem unearthed in Santa Ana, but an eatery that represents in Newport Beach and uses Jidori for its mole Poblano, of course.
Javier’s Cantina, which has locations in Newport, Irvine, and at a resort in Los Cabos, Mexico, will bring its own scattered blend of regional Mexican cooking to ARIA next summer in a tequila shrine designed by Dodd Mitchell. While Las Vegas’ Pink Taco, Border Grill, and Jose Andres-conceived China-Poblano all can trace ties, some looser than others, back to L.A., and even New York’s Gonzalez y Gonzalez has popped up on The Strip, this is the first Orange County export we’ve seen create a demand in Sin City.
