For one night only, Amada, Iron Chef Jose Garces’ Andalusian tapas bar in Old City, will offer a deal on one of its most popular menu items, Cochinillo Asado, or whole roasted suckling pig. Ordinarily the restaurant requires parties of four or more, reservations and at least 72 hours notice for suckling pig orders, but on March 25, it will offer the whole hog as an all-you-can-eat option. Whether you’re party of one or a party of 10, Amada will accommodate you. The $55 per person price includes as much roasted suckling pig as you can fit in your maw, as well as Ensalada Verde, a green salad with fava beans and avocado; Tortilla Española, a Spanish potato and egg cake with saffron aioli; and Chorizo a la Planxa with grilled skewers of Spanish sausage.
The pig itself, which is brined for two days in sugar and salt water, confitted in its own fat and the slowly roasted in the oven for hours, is served with braised black kale with garbanzo beans and lemon; herb-roasted fingerling potatoes; and bacon-rosemary white beans with Spanish ham. Amada will also offer bottomless glasses of red and white sangria with pig orders for an additional $20. The deal is limited to two seatings at 4 p.m. and 7 p.m.
