Remember how soothsayers amongst the fooderati told us that 2011 was going to be all about chefs doing pop-ups, and then throughout the next 12 months we hardly saw any? Perhaps they were off by a year. Here it is, less than two weeks into 2012, and we’ve already received word on two pop-ups. The first, of course, is the paladar dinners that Guillermo Pernot is hosting with visiting Cuban chefs at Cuba Libre. And this morning, Ben Puchowitz checked in with news of Roundeye Noodle Bar, a one-night stand of ramen, pho and other noodly delights that he’s hosting with longtime friend Shawn Darragh.

Roundeye Noodle Bar is a concept that Puchowitz and Darragh came up with to plug a pretty obvious void in the local dining scene, and hope to lure potential investors and a landlord to support it with the pop-up. It’s slated to run on January 29 at Matyson. The menu will boast spicy cucumber with feta, chickpeas, and pickled chili; broccoli with Vietnamese sausage, and sweet soy; duck pho with duck leg dumplings, foie gras, and pickled turnips; pork belly ramen with soy stained egg, shitakes, and swiss chard; and more. Service will begin at 4 p.m. and go until the food runs out.
