Speaking of chefs lucky enough to escape from NorCal, The L.A. Times shares a moment with Freddy Smalls chef Charlie Parker today. The former Plum toque details his love for fermented veggies, David Kinch, and A Tribe Called Quest, before dropping the gem that the bar serves a porcine breakfast sandwich. Parker says it’s “a fried egg sandwich with cilantro slaw, bacon, crisp pig ears and romesco sauce,” and can be found on the restaurant’s late-night menu. [LAT]
