Close readers of that rabbit hole that is the NYC food blogosphere will have noted that the chef at the new Acme is none other than Mads Refslund, a Dane who co-founded Noma in Copenhagen. It seems the Indochine team (Acme’s new owners, you’ll recall) convinced the chef to move to New York and work his New Nordic magic. He’s now offering fare in the categories of Raw, Cooked, Soil, and Sea/Land — a bit different than the fried chicken with myriad hot sauce choices you probably ate at the old Acme.
