Culinary Institute Team Trounces Competition at Napa Cochon 555

The national tour of heritage-pork fanaticism that is Cochon 555 kicked off on Sunday with the Napa installment, featuring defending champs John Stewart and Duskie Estes of Zazu, who not only won the local prize but took home the national title last year of King and Queen of Porc. Alas, they were unseated! The big winner Sunday was Culinary Institute of America chef Lars Kronmark who put out a plate including roasted and stuffed trotter; hard-cider cured mule-foot ham cooked in straw; a mortadella smorrebrod; and St. Croix pork fritters with beet jam.
