More details about Alpana Singh’s new Wells Street venture came out in a talk with Dish. Like the name: The Boarding House. And why it’s called that: Singh looked up the building’s history in old city directories and ran across a list of boarding house keepers, which she thought was cool— and suited the restaurant’s multiple levels, each with its own feel, like rooms within a boarding house. She also said that the plan is to collaborate with the chef to create dishes that really pair with the wines— but she can’t really say more about how that will work because they haven’t selected a chef yet.
