The restaurant, home to world-renowned cheese expert/maître d’ Louis Risoli, now has a tea sommelier as well. Cynthia Gold, one of the world’s foremost tea experts, has joined L’Espalier’s team and plans to infuse the restaurant’s menu with a variety of tea-based dishes. And cocktails!
In fact, we’re told that she’s one of the only tea sommeliers in the world, which sounds about right. She’ll work with the restaurant’s cocktail historian, Kate Moore, to concoct tea cocktails. Expect libations like Earl Grey with gin & elderflower liquer, Boylston Breakfast with Barbancourt Rhum, fresh orange and house made blood orange bitters, and a white tea with rose water, sake and champagne. She’ll also create a line of L’Espalier signature teas, which will eventually be available for you to take home.
