Ji Yoon, a French Pastry School graduate and veteran of several top kitchens, has been named Executive Pastry Chef under Chef Dirk Flanigan at the popular Henri and The Gage opposite Millennium Park. Most recently, Yoon served as Pastry Assistant at the Elysian Hotel’s Ria and Balsan restaurants. Before that she was a dessert intern at Boka and then moved to Blackbird, where she was a pastry assistant. She credits her childhood in Korea, where her grandmother ran a restaurant, with inspiring her love of food, and she plans to bring Asian influences such as cardamom and basil into desserts made using classic French techniques.
