Chef Bill Corbett, the highly regarded pastry whiz from San Francisco’s Absinthe Group, the collection of restaurants that includes Absinthe Brasserie & Bar, Boxing Room, Comstock Saloon and Arlequin Café is bringing his sugary sweet prowess East on Saturday for an intimate, one-off and very rare confectionary course at Audrey Claire’s Cook. The class, which is still accepting reservations, will focus on two of the award-winning pastry chefs areas of expertise, meringues and marshmallows. Both sweets staples are plenty enjoyable on their own, but are also considered essentials in the realm of pastry that can add an almost magical touch to pies, cakes and other desserts. In the class, Corbett will demonstrate how to whip up and apply both to a myriad of sweets. The class starts at 12 noon and costs $95 per person.
