Mark Coates, the promising pitmaster who first temped the city’s meat-tooth at dearly departed Bebe’s in the Italian Market and later from the kitchen at Fergie’s Pub, finally made it official yesterday with his long in the works Smoke Truck. Parked beside Wishing Well on Catherine Street, Coates turned out barbecue pulled pork and brisket yesterday afternoon and into the evening. Today, he set up shop at Community College of Philadelphia, where students were treated to more brisket, pulled pork sandwiches and sweet tea.
