We already knew that Waverly Inn partner and maître d’ Emil Varda had plans to turn former party scene the Beatrice Inn into something a little more stately, and it now appears that Graydon Carter will be pitching in: A newly submitted liquor license application to the State Liquor Authority lists the Vanity Fair editor and restaurateur as the principal at the revamped space.

If this comes to fruition, the new restaurant will no doubt be one of those "game-changer" things the kids are always talking about. Earlier this year, Carter had been linked to the old Elaine's space; meanwhile, several attempts to reboot the Beatrice have been made since the party stopped in April of 2009.

As always, we'll keep you posted as we hear more.
