Bar Pintxo bucks the ubiquitous trend of starting another handmade cocktail program of organic syrups and fresh fruit for a simple spirits-centered bar. Miller claims a trip to España inspired the idea after seeing how proudly the Spanish trumpet their takes on the botanical-infused spirit. To this end, the bar will concentrate on a menu specific to gin and tonics that seeks to make Pintxo a dependable sanctuary for those seeking the classic pre-dinner drink.
Labels include Plymouth, India-produced Raji Antiguo, and Farmers Organic, and drinks include flavorful twists like the addition of red grapes and raw ginger juice, infused black licorice, Manzanilla olives and basil, and saffron, cardamom, and Fever Tree Tonic, as well a straight forward G&T; with a squeeze of lime. Bucking another trend, of drinks priced into their teens, most of the cocktails come in at $8.50.
