You may have to wait a spell before the demand for fine dining rebounds. In the meantime, the number of comfort eats being dipped in opulence appears to be on the rise. Fast on the trail of Umami Burger’s $100 grass-fed wagyu-and-truffle stunt comes the news that Whist at The Viceroy is offering more reasonable $60 white truffle-topped pizzas and $40 black truffle-topped pizzas every Friday evening from 6:00 to 10:00 P.M. Exec chef Tony DiSalvo and chef de cuisine Chris Crary (now know to Grub Street readers as “Cutie Chris Who Is Right Near Our Age” following his small-screen debut on Top Chef last night) will man the restaurant’s poolside pizza oven every Friday evening through November to offer the luxury pies, along with a $20 plain pie for those who don’t, to quote one colleague, “geek out over truffles.”
