Bayless conjures up good airport food by sheer force of will.

Just in time to make Grub Street’s national roundup of the better places to eat in airports during holiday travel, Rick Bayless tweeted Saturday that the second Tortas Fronteras had opened at O’Hare in Terminal 3 (home to American Airlines), joining the initial outlet in Terminal 1 (United). Traditionally we wouldn’t have considered any airport food to be stop-the-presses news, but as the slideshow demonstrates, at least some of the nation’s airports are making serious efforts to get at least a few decent choices within their secured perimeters, and Bayless’s are among the best, according to frequent fliers like Jeff B. at LTHForum who commented:

Odd as it sounds, I think this is one of Bayless’s best efforts because it is so much better than what one expects or gets even from the top airport restaurants. I had a nicely done Bohemia michelada with good guac and chips and a chile con queso mollete the other afternoon, and it was all great irrespective of venue. My fellow delayed passengers from TX and NY were freaking out. The “secret” seems to be that the O’Hare location is run by real restaurant staff (not sullen airport workers), including a lady in chef gear expediting who clearly knows how to run a kitchen. I’ve been underwhelmed my last few visits to Topolo, which I think time has passed by, but Xoco and the airport place give me renewed respect for R.B.
