In a new profile of locally renowned butcher and aspiring meat entrepreneur Oscar Yedra, SF Weekly’s Lauren Smiley ends up penning a piece profiling the current trendiness of the butchery arts in general. At 45, Yedra, a Mexican national and a former head meat-cutter for Niman Ranch, isn’t the face of the young and hip Butcher’s Guild clique or a coverboy for Meatpaper, but he’s a butcher that pretty much every other butcher and meat purveyor in the Bay Area seems to respect and admire.
